Recipe of the Week - Speedy Chicken Paella

For one-pot cooking fans, here's a speedy and tasty chicken dish to make a perfect family meal.

 

 

 

 

 

 

 

 

 

Time to table - 35 minutes. Serves 4.

 

approx 3.5oz chorizo (Spanish-style sausage) or pepperoni, cut into small chunks

1lb chicken breasts, each cut into cubes

1 medium red pepper, chopped

1 clove garlic, crushed or finely chopped

thyme to season

8oz paella-style yellow rice

10oz frozen peas

 

Cook chorizo in a medium frying pan over medium-high heat for 2 to 3 minutes or until fat is released,(you won't need extra oil to fry as the chorizo is naturally oily) stirring occasionally. Place chorizo on a separate plate but keep the oil in the frying pan.

Add chicken and cook 3 to 4 minutes or until cooked through then transfer chicken to chorizo plate.

Add pepper, garlic, and thyme to frying pan and cook 1 minute.

Add rice, 2 cups water, and chorizo and bring ingredients to the boilthen reduce heat to medium-low and simmer, covered, for 10 minutes.

Stir frozen peas into rice mixture and cook for 5 minutes, covered. Next, stir in the chicken and heat through.

Serve hot either with crusty bread or a fresh green salad.
