October - Tomatoes

Tomatoes have been proven time and time again to prevent cancer (particularly prostate cancer in men), reduce cholesterol, protect against sunburn, strengthen the immune system, boost fertility and even sharpen our eye sight. Officially a fruit (not a vegetable as many people believe them to be) they are even better for you cooked that raw as cooking releases the magic ingredient that they contain called lycopene.
There are many, many different types of tomatoes all varying in size and colour. If you have a glut of them this autumn roughly chop them up, place them in a roasting tin, sprinkle with a little olive oil and balsamic vinegar and add some slices of good quality chorizo sausage and plenty of crushed garlic cloves. Roast them all up in a hot oven for approximately 20 minutes and eat served over hot pastas, couscous or spread on chunks of warm bread.
