Serves 6
Time to table - 1 hour
- 6 chicken breasts (tastier with skin left on)
- 1 finely chopped onion
- 2 crushed garlic cloves
- olive oil
- 2 x 400g tins tomatoes
- 4 tbsp mascarpone cheese
- a handful basil
Heat the oven to 190C/fan 170C/gas 5.
Using a large frying pan, fry the onion and garlic cloves in olive oil until softened.
